A Little Bit of Chicken Fried

I love the Zac Brown Band, so when I heard that they were coming to Kingsport to play at Fun Fest I got super excited! I posted a message on Facebook to see if any of my friends wanted to join me and as soon as I did that one of my friends  called me and said that she had 4 tickets that she wasn't using but her daughter wanted to go and wanted to see if I would take her and one of her friends and then one of my friends could come too! I was like HECK yeah I can take them. Now when I say tickets I don't mean general admin tickets I mean VIP, you  can feel the sweat dripping on you from the band tickets. It was soooooo awesome! They had 2 people opening for them, Levi Lowery (country blues) and a really cute guy named Nic Cowan  (soul, funk, country) I really liked him. You should look him up on Facebook and become a fan! Anyway they played for over 2 hours and they rocked! I had a GREAT time!

 Mom's do you ever have those days that you feel like your not doing enough as a mom or your kids are driving you crazy and you just need a nap from it all? Well I know I do! I just found this video on lds.org so I thought I would share it to remind all of us that's it's ok if we are having a bad day and to keep our chins up. Heavenly Father see's our struggles, remember that this is an Eternal-Partnership and he is always there to help if we just have faith in him and get on our knees and have a conversation with him. Grilled Portobella Mushrooms topped with Tarragon-Accented Veggies

 My husband always thinks that you have to have meat at dinner. Now don't get me wrong I love meat, but sometimes it's nice to eat a meatless meal. These portobella mushroom caps are so good that you pretty much forget that your not eating meat. This is a nice vegetarian option to have for dinner. Enjoy!

4 portobella mushrooms, stems cut off, diced and reserved
2 Tbsp olive oil
salt and pepper to taste
2 Tbsp veggie oil
1 small red onion, diced
2 tsp garlic, minced ( to save time I always use the ones that are already minced up that comes in jars)
2 Tbsp tarragon, minced
1 cup packed spinach, roughly chopped (fresh spinach not frozen)
2 roma tomatoes, diced
1/2 cup heavy cream
1/2 cup asiago cheese,grated and divided

Cut off mushroom stems, dice and reserve 
Rub the mushroom caps with olive oil and salt & pepper to taste. Grill and set a side 
In a medium saute pan, heat the veggie oil. Saute the diced onions, mushroom stems, garlic and 
tarragon. Season with salt and pepper. 
Toss the in the spinach and tomatoes and finish with heavy cream and half of the Asiago cheese. Cook until the cheese is melted.
To serve top the portobello mushrooms with the veggie mixture. Sprinkle with the rest of the Asiago cheese and broil until the cheese on top melts. (about 2-3 minutes)

Vent Fest!

Ok so I just have to let it out because this is just the last straw! So many of you know that I decorate cakes. I have people ask me a lot to do cakes too! But here is the part that I have to vent about. First off when I do a cake it takes me all day to do it. I customize cakes to what the person wants. Its not the cakes that you just get at walmart that are just sheet cakes with just buttercream and plastic fugures ontop. If I can I try and make the figures myself and I also make my own buttercream and fondant. The cake supplies itself is expensive then you have to add the time you put into making the cakes too and clean up! It amazes me that people are willing to pay me $60 bucks for an hour massage but then when I tell them their cake will cost around $60 they don't want to pay it. I'm not willing to go down on my prices just because someone doesn't want to pay that price. If you look around on the internet you will see that I'm really not that expensive. I feel that my time is worth more than that and I'm not going to lower my prices because you are not willing to pay for it. If you want Walmart prices then go to Walmart. If you want a one of a kind cake that everyone will remember and not to mention it will taste great too then see me. Oh and it's not just the size of the cake either it's also how much detail is put into it. Sure I can do a buttercream sheet cake that says happy birthday on it for $35 but you aren't going to get details. This is not stemming from one incident in particular but a bunch over time that has just built up into me just having to let it all out. Sorry that yall had to witness my venting but if I didn't I might just explode! LOL

Spicy Sausage Cheese Balls

I've grown up eating these tasty little guys at all kinds of different family get togethers. I brought them to an activity last night and a lot of people asked for the recipe so I thought I would post it on here for ya'll.


1 lb of Hot Sausage
2 cups of bisquick
2 cups of shredded Sharp Cheddar cheese
1 tsp garlic powder


Mix together the Bisquick, cheese, and garlic in a bowl then add the uncooked sausage to the bowl and kneed and mix it all together into one big ball. Then roll small little balls in your hand. ( you can use a cookie scoop to make more uniform sizes) Place onto a greased cookie sheet and bake at 350 degrees for 20-25 minutes.
*You can also make the sausage balls earlier in the day and place them in your fridge covered until ready to cook that evening or the night before and cook them in the morning for a yummy breakfast or brunch too!

Ammon's Pirate Birthday Partee...and such!

We went to Bamaland (that what Josh likes to call it)  for a visit with the fam. It was actually enjoyable this time because Josh came along. I couldn't tell you the last time we all went to visit family together. We stayed at my parents house for 3 nights and then at Josh's Aunts and uncles house for 3 nights. While we were there we had a great BBQ and swim party at my parent's and brothers house. (please note that my parents and my brother live next door so we swim at my brother's but eat at my parents.) Anyway then Sunday night we watch the fireworks that the city does which is really nice because now they do them up the street from my parent's house so we just make our merry way up the hill and sit out some blankets in a field and get eaten up by misquetos while watching the show. It is really nice not to have to get stuck in that traffic coming and going from the fireworks show! Then the next couple of nights we were up in B-ham visiting Josh's family. Josh's aunt Terri was so nice, she let us have an early birthday party for Ammon at her house. It was really great! We had my family and Josh's family there to celebrate. We did a pirate theme that I threw together at the last minute. While we were out of town our cruise control died on our van too. Luckily it was still under full warranty. It was only 200 miles till it was out of warranty too! So we got that fixed. We didn't have a car for a day in a half but it wasn't too bad because Josh's mom and Granny live right around the corner so we just walked to their house when needed. But when we got back in town we weren't so lucky. Our A/C broke when we were away and our thermostat read 89 degrees when we walked in. We just got it replaced today. So I went  4 1/2 days with no AC and there were times that it said that it was 86 in the house, even with the windows open and fans on. We ended up hanging in the basement a lot. It was about 5 to 10 degrees cooler down there. Well anyway besides the AC thing we had a good 4th of July visit.

Ham, Egg, and cheese muffun cups

So I know what your thinking what the heck is that?  Well I'll tell you... its just a little bit of goodness in your mouth to start the day off right. I promise you will like these.  If you have 2 or more kids then make sure you do all 12. They go fast!

12 lg eggs

12 slc ham, smoked and deli-sliced

1 bx 10 oz frozen spinach, thawed and strained

2 c shredded cheese

a pinch salt and pepper

Preheat oven to 350 Spray muffin tin with cooking spray. Press a slice of ham into each muffin cup. Evenly distribute spinach between muffins cups. Evenly distribute cheese between muffin cups. Crack 1 egg to each muffin cup. Season with salt and pepper. Bake for 25 min or until done.
 
Now the 25 minutes in my oven cooks them all the way through. If you want the yolk a little runny then try cooking them for 20 minutes. You can also scramble the eggs instead of doing them sunny side up. Or mix it up a bit and do half the batch scrambled half sunny side up. You can also use tomatoes instead of spinach or even salsa with the spinach. Anyway I hope you enjoy this yummy breakfast treat!
